Tortellini and Bean Soup

Ahh this soup is the most delicious soup in the world.

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 6 strips of bacon, chopped
  • 1 28-ounce can of crushed tomatoes
  • 2 packages of cheese or spinach tortellini
  • 6 cups of chicken broth, hot
  • 1/2 teaspoon each of oregano, basil, minced garlic, black pepper
  • 1 can of red kidney beans, drained and rinsed
  • 1.5 bags of fresh spinach leaves destemmed
  • Parmesan cheese

In a large saucepan, heat oil and add bacon and onions. Cook until onions are wilted and bacon is crisp. Add tomatoes, chicken broth, tortellini, spices, garlic, and beans. Bring to a boil, simmer for 15 minutes or until tortellini are done. Stir in spinach, cook for 5 minutes more. Top with fresh grated Parmesan cheese.
