Coffee cubes

Iced coffee is one of my favorite things about summer. Whenever I wake up (usually sweating) and have to face the trek up two flights of stairs to the shower, and when I’m dreading the moment I have to turn on a blow dryer of all things and point it at my face, it’s all made a little better by a glass of freezing cold deliciously creamy sweet iced coffee.

When I ditched the coffee pot this winter for a Keurig, I didn’t consider what this would mean for my iced coffee habit come April (when temperatures last week topped 95 degrees—thanks, greenhouse gases!). Fortunately, the problem is easily solved when I remember to brew a cup the night before, and make some coffee cubes.

Although this is common sense to some, it is practically genius to others. One roommate thought I had frozen root beer, and another was seriously concerned about what I was putting into my coffee. Truly though, it could not be easier to freeze a tray of coffee cubes to use for your iced coffee—and no more grossly diluted brews, either.
