Mojito madness!

It always seems like such a good idea to include mint in the herb garden. But mint is very weed-like; it takes over all the other beautiful things you’ve got goin’ on, such as lemon thyme and parsley and sage.

Mint goes crazy.

So, what’s a girl to do!?

Make mojitos!

Here’s my recipe:

  • 1 shot glass simple syrup
  • 1 heckuvalotta mint leaves
  • 1/2 a lime
  • 1 shot of Bacardi
  • sparkling water
  • lots of ice, preferably crushed

Make yourself a simple syrup (boil 1 cup of water and add 1 cup of sugar, or some similar 1:1 ratio). Let it cool, can be refrigerated for a while. Pick all the annoying mint leaves from your garden. In the bottom of a glass, put a bunch of mint leaves, all the juice you can muster from the crappy limes this season, and the simple syrup and Bacardi. Muddle it all together with whatever you have handy (the back of a microplane zester worked well yesterday). Throw in the entire spent lime half.

Top it all off with however much seltzer you enjoy for bubbles and dilution. Add lots and lots of crushed ice!

Sip on the patio with friends while PJ eats everything in sight. Enjoy!
