Cheesy berry pie

June 27, 2010

One time a good friend and I were playing a question game, during which she asked me to “describe your ideal Sunday.”

Sundays have changed a lot since college; the dreaded, hungover days of library misery and sorority meetings and not enough sleep and too much homework are gone. Those Sundays have been replaced with coffee and newspapers, late-morning cereal, the gym and laundry and reading, errands, cleaning, cooking, pies, chopping, movies, Friday Night Lights marathons, and relaxation. In a word, they are pretty ideal. All I need to add to the picture is a dog.

And a boyfriend.

Bygones! This pie is so easy yet so delicious it should be a crime.

Creamy Cheese Pie

1 less-fat graham cracker crust
1 pack strawberries
1 pack blueberries
1 8 oz. 1/3 less-fat cream cheese, softened
1/3 c. sugar
1/2 c. reduced fat sour cream
4 oz. light Cool Whip
1 teaspoon vanilla

Beat the cream cheese until soft, add the sugar. Mix in the sour cream and vanilla. Fold in the Cool Whip and the berries. Chill 2-4 hours before serving.

(Sorry for the worst picture ever, it was late and my natural light was all gone.)

I will make this. Most likely tomorrow. It is making my stomach grumble just looking at it!
